by nationality and culture, this encyclopedia offers a comprehensive
overview of ethnic and immigrant food cultures in the US. Each
entry includes a cultural background on a group, a summary of its
immigration and settlement history in the US, a description of
traditional foodways and adaptations made in the US,
and discussion of the place of those foods in the contemporary American
food scene and popular culture. Recipes representing iconic foods are
given for most groups.
